Definition of Carotenoids
Carotenoids are a group of naturally occurring pigments found in plants, algae, and some bacteria. They are responsible for the vibrant colors in fruits and vegetables and are known for their antioxidant properties.
Types of Carotenoids
There are over 600 known carotenoids, but the most well-known and studied types include:
- Beta-Carotene: The most common carotenoid, which the body can convert into vitamin A.
- Lycopene: Found in high concentrations in tomatoes and responsible for their red color.
- Lutein: Concentrated in the macula of the eye and important for eye health.
- Zeaxanthin: Similar to lutein and also important for eye health.
- Astaxanthin: Found in marine organisms like salmon and shrimp, known for its strong antioxidant properties.
Functions of Carotenoids
Carotenoids play several important roles in the body:
- Antioxidant Protection: Carotenoids neutralize free radicals, reducing oxidative stress and inflammation.
- Vision Health: Lutein and zeaxanthin protect the eyes from harmful blue light and reduce the risk of age-related macular degeneration.
- Immune Support: Beta-carotene, when converted to vitamin A, supports immune function and skin health.
- Heart Health: Lycopene has been linked to a reduced risk of cardiovascular diseases.
Sources of Carotenoids
Carotenoids are found in a variety of foods:
- Beta-Carotene: Carrots, sweet potatoes, spinach, and kale.
- Lycopene: Tomatoes, watermelon, grapefruit, and papaya.
- Lutein and Zeaxanthin: Leafy green vegetables like spinach and kale, as well as corn and eggs.
